Microwave Apple Crisp Omelette

Enjoy a little apple crisp in your omelet with this easy microwave recipe. The sweet flavour of apples and cinnamon add a great texture and flavour to your morning egg. Using a shallow bowl helps speed up and even the cooking time in the microwave.
- Half a small apple, cored and chopped
- Pinch ground cinnamon
- 1 egg
- 2 tbsp (25 mL) milk
- 2 tbsp (25 mL) large flake oats
- 2 tsp (10 mL) wheat germ
1. In small shallow microwaveable bowl, stir together apple and cinnamon. Cover and cook on High for 30 seconds.
2. In a small bowl, whisk together egg, milk, oats and wheat germ. Pour into apple mixture and stir to combine. Cover and cook on high for 30 seconds; stir gently and cook on high for another 30 seconds or until egg is set.
Savoury Option: Use this method for Broccoli and Cheese Omelet. Omit apple, cinnamon and oats. Substitute 1/2 cup (125 mL) chopped fresh or frozen broccoli, Pinch freshly ground black pepper and 2 tbsp (25 mL) shredded light cheddar cheese. Cook as above.
