Brulee Baked French Toast

With a crunchy sugar topping this french toast is easy to prepare and enjoy for a weekend breakfast. Any leftovers can be warmed through in the microwave for a fast weekday breakfast.
4 slices whole grain bread
4 eggs
3/4 cup (175 mL) milk
1 tsp (5 mL) vanilla
1/2 tsp (2 mL) ground cinnamon
2 1/2 tbsp (35 mL) packed brown sugar
2 cups (500 mL) fresh or frozen mixed fruit
Place bread slices into lightly greased 8 inch (1.5 L) square baking dish, trimming to fit if necessary; set aside.
In a bowl, whisk together eggs, milk, vanilla and cinnamon. Pour over bread and let stand for at least 30 minutes or cover and refrigerate for up to 24 hours.
Bake in 375 F (190 C) oven for about 20 minutes or until golden brown and knife inserted in centre comes out clean. Sprinkle with sugar and broil about 6 inches (15 cm) way from broiler for about 2 minutes or until sugar is golden and bubbly. Serve with fruit.
Makes 4 Servings.
Tip: You can reheat any leftovers in the microwave and serve with fruit.
